White bean & thyme dip
Makes about 2 cups
850g cannellini beans (2 cans)
6 tbsp thyme
1 tbsp chilli oil
1 brown onion
6 cloves of garlic
1 tbsp lemon juice
¼ cup olive oil
Salt and pepper to taste
Preheat the oven to 200 degrees celsius. Roast the onion and garlic with a good drizzle of olive oil for 20-30 minutes until soft and golden.
Place the roast onion, garlic and remaining ingredients into a conventional blender, mixing until you reach your desired consistency.
Serve and enjoy!

(IDDSI 5) Minced & moist: When blending, ensure that the lumps are no bigger than 4mm. If liquid separates from the spoon, thickener may need to be added. Refer to the test guide as needed.
